chicken fajitas with a honey chipotle sauce

When I first started syncing my nutrition with my cycle, I knew that certain ingredients were better than others. My nutrition course taught me that not all products are created equally and after many months of deep diving into this, I knew I wanted meals that not only flowed with my cycle but that set my body and gut health up to be able to handle anything that came their way.

I have been trying different recipes for each phase of my cycle for almost 2 years now and in my process of pinning recipes and adding books to my ‘book list’ board, Pinterest brought ‘The Moon Cycle’ Cookbook to my attention. I just recently bought this book and it is thoughtfully created and beautiful. The book is a holistic nutrition guide for your menstrual cycle. WHAT A PERFECT MATCH. Devon Loftus is an author, writer, speaker, and she is the founder of Moon Cycle Bakery. Jenna Radomski is a recipe developer and holistic nutrtionist. She also lives in sync with her cycle. I am telling you, being in tune with your cycle will change your life.

Lets start with this recipe : Chicken Fajitas with a Honey Chipotle Sauce

When I tell you I am EXTREMELY picky when it comes to my chicken, that is not an understatement. I could not be more particular about my chicken. The taste, texture, smell, everything has to be perfect if I am going to eat it. This recipe checks all of those boxes, even re-heated and I can not stand re-heated chicken.

The honey chipotle yogurt sauce is a game changer. Not only is it delicious, but it is the perfect balance of sweet, spicy, and creamy. Not to mention the extra protein it adds on top of the chicken itself. I added Stonyfield Greek yogurt to my tortilla as a ‘sour cream’ before my chicken. The peppers provide a nice crunch for additional texture in your fajita.

THE RECIPE :

The Sauce -
1/2C of plain greek yogurt ( I recommend this one)
2 chipotle peppers in adobo sauce, plus 1tsp of the sauce
2TSP of orange zest
2TSPS orange juice
1TBSP raw honey
3/4TSP salt
1/4TSP garlic powder

Fajitas -
2TSP avocado oil
1LB of boneless chicken thighs, cut into bite size pieces
1 medium yellow onion
1 larg red pepper, sliced
1TSP salt + pepper

TO MAKE :

To make the sauce, combine the yogurt, chipotle peppers and adobo sauce, orange zest, orange juice, honey, salt, + garlic powder in a blender and mix until smooth. Set aside.

The Fajitas, heat the oil in a large skillet over medium-high heat. Toss the chicken and cook until browned and cooked through, 10-12 minutes. Add the onion and bell pepper and saute until they begin to soften.

Pour the sauce into the skillet, stir, and bring to a simmer. Cook for 5 minutes, then remove from the heat. Stir in the salt + pepper to taste. Serve immediately in tortillas (I recommend Siete tortillas) with quinoa, or rice on the side if desired. Can refrigerate up tot 3 days.
